Avocado Basil Plant-Based Diet Spaghetti Recipe

(2 Servings, 15 Minutes)


Ingredients:

  • 1 cup of fresh basil leaves

  • ½ cup of extra virgin olive oil

  • ¼ cup of lemon juice

  • ½ large avocado

  • ½ box of thin spaghetti

Instructions:

  1. In a blender, combine the fresh basil, extra virgin olive oil, lemon juice, and avocado. If desired, you can also add garlic and black pepper for added flavor.

  2. Blend the ingredients together until they form a smooth mixture. Transfer the avocado basil blend to a bowl.

  3. Cook the thin spaghetti according to the instructions on the package. Once cooked, drain the spaghetti and return it to the pot.

  4. Pour the avocado basil mixture over the spaghetti in the pot and mix well, ensuring that the spaghetti is evenly coated.

  5. Serve the avocado basil spaghetti and enjoy!

Note: You can garnish the dish with additional fresh basil leaves or grated Parmesan cheese if desired.
